Orange Chicken

Tasty and easy.  Adapted from this recipe.

Orange Chicken

6 boneless chicken thighs cut up into chunks
2 T bacon grease or butter
juice of 4 clementine oranges plus zest from one of them
1/2-1 tsp ginger powder
3 T tamari
1 tsp Siricha
3 green onion, chopped (scissors work great here)
toasted sesame seeds

Mix the juice, zest, ginger, tamari and Siricha in a sauce pan and put on low until it reduces and is sticky.  Meanwhile, heat the grease and stir-fry the chicken chunks until brown and a bit crispy on the outside.  Once the sauce has reduced, pour over the crispy chunks of chicken.  Serve chicken topped with green onion and a sprinkle of sesame seeds.

"Irish Soda Bread" - the sweet kind

I wanted soda bread to go with our corned beef the other night.  This recipe seemed doable.  A bit more of the sweet bread style.  Tasted good...Laura even liked it :)

Gluten-free Irish Soda Bread (adapted from the Betty Crocker website)

2 c gluten-free flour mix
1 1/2 tsp baking soda
1 tsp baking powder
3/4 tsp salt
1/2 tsp xanthan gum

1/4 cup sugar
3 T soft butter
1 egg
1 c buttermilk
1/2 c dried cranberries

Heat oven to 450 degrees.  Grease cookie sheet.

Mix together the flour, soda, powder, salt and xanthan gum.  In separate bowl (I used KitchenAid mixer), beat sugar, butter and egg on medium speed about 2 minutes or until light and fluffy. 

Gradually mix in flour blend mixture alternating with buttermilk.  Mix in cranberries.

Scrap out of bowl onto greased cookie sheet into a mound like a roound soda bread loaf.  Cut an X across the top with a sharp knife.

Bake at 450 degrees for 5 minutes then turn heat down to 350 degrees for about 25-30 minutes.
