Made these tonight...both boys seemed fine with them. That means they can go on permanent rotation ;)
Quinoa Cakes
2 c cooked and cooled quinoa (ie measure it after you cook it)
1/4 c gluten-free flour
1 c shredded cheddar
2 eggs
2 T fresh cilantro, chopped
2 tsp Sriracha
2 tsp chili powder
2 tsp paprika
1 tsp garlic powder
1/2 tsp salt
Mix the above ingredients together. Heat some olive oil in a pan over medium heat. Drop by spoonfuls into the pan and flatten slightly. Cook until crispy on one side, flip and cook until crispy on the other side. Eat and enjoy.
Also, quite good with a bit of my "Ranch dressing" made into a dip. Mix 1/2 c of the dressing with 1/4 tsp paprika and 2 T lime juice.
It's not always best to do what you're "supposed to" do...you might miss out on something great! Besides, who gets to decided what you're "supposed to" do anyway?

Date Cookies
medina loved these. I found them easy to make and they were pretty tasty.
Date Cookies
1 3/4 c almond flour (used the stuff from Trader Joe's...nothing fancy)
1/4 c big bore sugar
1/4 tsp baking soda
1/4 tsp salt
1 egg
1 T water
3 T oil
1 T vanilla
1/3 c chopped dates (used the cheap ones from Winco bulk bin)
1/3 c chopped walnuts or pecans
Preheat the oven to 350 degrees. In a large bowl, mix together the dry ingredients. Then, add the wet ingredients and stir until everything is completely combined. Then mix in the dates and nuts.
Line a baking sheet with parchment paper or oil and scoop balls of dough (should make 18) onto the sheet. Press the dough down to ½- inch thick circles. Bake for 12-15 minutes, until slightly firm. Let cool before serving.
